Meet Chef Elliot
My love of cooking began in Jackson Hole, Wyoming, where at sixteen I took a summer position at Shooting Star Country Club with the encouragement of my high school culinary teacher. That summer turned a lifelong comfort in the kitchen into a calling, and I've been cooking professionally for more than thirteen years since.
Along the way I've worked in nearly every kind of kitchen, from fast casual and food trucks to catering, private dining, and fine dining. Fine dining events and private dinner parties are where I found my footing, and they're where I do my favorite work: creating a memorable experience for people to share with the ones they love.
I spent the last three years of my career at restaurants in Denver, working as Lead Grill Cook and Lead Expediter for two of Marriott's premier steakhouses: Old Hickory Steakhouse at Gaylord Rockies Resort & Convention Center and Elway's Downtown at The Ritz-Carlton Denver. I led 350+ cover services with minimal remakes while overseeing VIP guests and dietary accommodations. Both kitchens regularly set Guest Satisfaction Survey records, and I helped the executive chefs run the dry-aged beef program, from selecting and curing the beef to butchery, portion pricing, and inventory rotation. Running those kitchens also taught me the business behind the plate: menu planning, scheduling, ordering, inventory, and food cost.
My cooking is rooted in French haute cuisine, blended with Southern, Latin American, and Asian influences and built around seasonal ingredients. My fine dining background is red meat forward, and I'm equally at home with seafood like ahi tuna, trout, salmon, halibut, and sea bass.
Away from the kitchen, I'm usually outdoors, hiking, camping, hunting, or fishing, and that time outside shapes how I approach seasonal ingredients. I also ride motorcycles, practice martial arts, and practice the drums to keep my creative side sharp.
I serve the Dallas, Texas area from fall through spring and Jackson Hole, Wyoming in the summer. I'm also open to travel for the right event, as my schedule allows.
Whether it's an intimate dinner or a larger celebration, my goal is the same: for you to enjoy your own event while everything runs seamlessly.
